Dru is a solicitor with expertise in the hospitality industry. Dru is highly skilled in the areas of employment law, liquor licensing and local planning law. He is the principal of SILS, a boutique law firm with an ’employer’ focus, located in the CBD of Sydney.
In the areas of liquor licensing and local planning law, Dru’s client base includes hotel groups, bottle shops, karaoke venues, restaurants and caterers. Presently he lectures in liquor licensing law at Sydney TAFE.
In the area of employment law, Dru advises labour hire organisations, big retailers and supermarkets. Sophisticated employers in the restaurant and catering industry rely on Dru for detailed advice on modern award wage rates and allowances endorsed by the Fair Work Ombudsman. Dru’s restaurateur clients share in excess of 40 hats (SMH Good Food Guide 2014), of which several have three! Many of Sydney’s award winning caterers rely on SILS.
